Lemon Cupcakes

Ingredients

  • 2 cups cake flour
  • 1 1/4 cups granulated sugar
  • 2 teaspoons baking powder
  • 1 package (3 oz.) lemon gelatin
  • 3/4 cup milk
  • 2/3 cup vegetable oil
  • 2 tablespoons lemon flavoring
  • 3 eggs, separated

Yield: Makes about 18 standard cupcakes.

Directions

  1. Preheat oven to 325°F.
  2. In large bowl, combine flour, 1 cup sugar, baking powder and gelatin.
  3. Add milk, oil and lemon flavoring; mix well.
  4. Beat in egg yolks, one at a time.
  5. Beat egg whites until stiff, but not dry, adding remaining 1/4 cup of sugar.
  6. Fold egg whites into batter.
  7. Pour into prepared pan.
  8. Bake 20-25 minutes or until toothpick inserted comes out clean.
  9. Cool 10 minutes in pan on rack; remove and cool completely before decorating.
